This poor guy was drowned in brine overnight and now he's had his spine ripped out! He's been patted dry and is drying off in the garage fridge so the skin will get crispy in the Big Joe tomorrow.

Second pic is the bunch of chicken thigh skin I've been saving the last few months from whenever I do something that calls for boneless, skinless thighs. Rending the schmaltz and then will simmer a lot of garlic and ginger in it for ramen aroma oil. Will have ramen tonight and I'm making braised pork belly as the topping.

I didn't take pics, but phuck, that ramen was good! So many layers of flavour and you only get that mouth feel from chicken fat aroma oil.

This was delicious. Super tender and juicy, crispy skin, and nicely smokey.
